Now Because of Your Diet, I Have to Eat the Rest of This

My poor husband. He is being a pretty good sport with my new eating habits and he is slowly getting used to preparing fruits with meals and he now always grabs light mayo and applies it with a light hand.

But the leftovers are getting him, “Now because of your diet, I have to eat the rest of this.”

In our household we try not to let things go to waste. Before I started this journey, one of us would always finish off whatever food was leftover usually at the same sitting. We would stuff ourselves so we didn’t waste any food. Slowly, we are getting used to cooking less for a meal, but has been very hard since we have been cooking things a certain way for so long.

But I had to publicly thank my husband for being such a good sport :)

Why not save leftovers for lunch the next day? My wife and I usually cook enough food for 4 to 6 people. Granted, I eat enough for 3 or 4 people myself, but we like having the leftovers to provide lunches for the week.

I’m glad your husband more-or-less supports you, but it’s also time for him to act like a grown-up with less whining…eating slightly healthier food is nothing worth whining about! Maybe he will also find better health and some weight loss as well, making his lifestyle more affordable and keeping him healthy for your son. And then he might also stop his financial whining that you’ve mentioned before regarding going out to eat, spending extra cash on things like milkshakes, etc.

I’m with Blaine… I don’t see why you can’t save food for the next day. I’m trying to make food for a whole week starting on Sunday. My goal is to have every dinner a different form of leftovers :-)

Making large quantities of food and then having the leftovers for the rest of the week is a great way to save money and time too. One great food to have for leftover is vegetable lasagna because it actually tastes better as a leftover because everything has more time to marinate. I like to make two at a time, eat one that week and freeze one for later in the month.

Some leftovers we do save, but often times we don’t save them. Sometimes there isn’t enough to make another meal or side dish out of it (that’s when we’d try to eat everything). Other times it’s not something that keeps well. There’s been times where we have saved things only to forget about them in the fridge and have interesting things growing in there. If there is one area that we really need a makeover on it is with food preparation/meal planning. A better thought out plan will save us money and will keep down on waste.

Jane - there is a lot that goes on behind the scenes that my husband does that I don’t talk about. He does support me a great deal. While I would like him to eat healthier as well, I cannot force him into it. But I can help influence things by the foods I now buy.

This post was meant to be more comical in nature, because it was funny when my husband said it. Sometimes I forget that everyone reading does not fully understand the dynamic of our marriage. My husband does support me in many ways.

Your husband might stand to eat smaller portions too. Seriously, sometimes it’s better to THROW THE FOOD AWAY than to consume the extra calories - for both of you. This was a hard lesson to learn since no one likes to “waste” food, but really, do you want that extra food on your body?! If it’s such a small amount that it won’t even make a suitable leftover side dish, just ditch it, or compost it.

Ghoulash is like the vegetable lasagna; it tastes better reheated, and its easy to make a week’s worth at one time. It also freezes we;l.

We also do two lasagnas at a time when we make it; in fact, I have one in my freezer right now that I should probably thaw out and cook in the near future. Maybe if the weather looks like it will be less than ideal for grilling next week it will be cool enough in the house to reheat the lasagna…
